Plant-based sushi with avocado is a fun recipe to prepare and serve, perfect if you invite friends for dinner or just to have a special and colorful meal. Nori seaweeds are rich in iron, vitamin C, beta-carotene and iodine, they wrap the semi-whole grain rice and slices of avocado, that is a fruit rich in vitamin E, a powerful antioxidant. The rice is dressed with a sauce made with vinegar and sugar that makes this dish very fascinating and surprising.
Ingredients for 20 maki
3 nori sheets
200 g of semi-whole grain rice
1 avocado
3 tablespoons of rice vinegar (or you can use apple cider vinegar)
1 teaspoon of whole cane sugar
A pinch of salt
Rinse the rice in running water and cook it in slightly salty water, follow the timing reported on the pack. Then, drain the rice, rinse it quickly and put it aside. In the meantime, in a bowl, mix the vinegar, the sugar and the salt, stir with a spoon until sugar and salt dissolve. Pour this dressing on the rice and stir gently. Lay the nori sheets on a work surface and put on each sheet a layer of rice, let it cool down. Then, peel the avocado and cut it into slices. Put in the middle of every rice layer the avocado slices, now roll each nori sheet up tightly starting from the one long side. Cut the roll in slices and serve your maki. If you like you can also serve the maki with wasabi sauce, that you can prepare by dissolving a teaspoon of wasabi powder in a teaspoon of water until you’ll obtain a soft sauce and the dip is ready.
