Natural tofu, even though it is healthy and nutrient, is not very tasty. Today we propose a delicious dish that has all the properties of radicchio, rich in fibers and nutrients, the plant based proteins and flavonoids of the smoked tofu, a tastier version of natural tofu, and the characteristics of the semi whole grain rice, with slow-release carbohydrate that don’t cause dangerous picks in the blood sugar levels but, on the contrary, give energy for a longer period of time.
Ingredients for 4 persons
300 g of semi whole grain rice
300 g of radicchio
200 g of smoked tofu
1 liter of vegetable broth prepared with carrot, celery, onion and turnip
1/4 onion
Extra virgin olive oil
Salt
Pepper
Rinse the rice under running water. Chop up the onion and sauté it in a large pot with a little extra virgin olive oil and two tablespoons of water. Add the rice and cook it for a minute. Then add two ladles of broth and keep on cooking in accordance with the timing reported on the pack of the rice, sometimes add a ladle of broth. In the meantime cut the radicchio into thin strips and cut the tofu into slices. Cook the radicchio and the tofu in a frying pan with a little olive oil for two minutes. When there are 5 minutes left at the end of cooking of rice add also the radicchio and the tofu, stir with a spoon and cook for the last 5 minutes. Serve the risotto.
