If the brownies are little delicious beauties with dark chocolate, their blonde version, the blondies, are no less yummy! Now that we are coming up to the holidays and the coldest months, where you prefer to stay at home, here for you a sweet snack or dessert really amazing, to impress your friends and family with a fancy, yummy and healthy recipe, because there aren’t refined flours and white sugar, butter and eggs. On the contrary, we use just semi whole grain and whole grain spelt flour, brown sugar, plant based milk and yogurt and extra virgin olive oil! And the final touch to this cake is given by the inebriating flavor of raspberries that goes very well with the softness of white chocolate and the crunchiness and sweetness of cashew nuts.
100 g of semi whole grain spelt flour
60 g of whole grain spelt flour
50 g whole cane sugar
100 g of white chocolate (I used white chocolate prepared with rice milk)
2 teaspoons of yeast powder
30 g of sliced almonds
40 g of extra virgin olive oil
150 g of milk (I used cashew and hazelnut milk, really yummy!)
40 g of yogurt (for example soy milk)
1/2 teaspoon of vanilla powder
Frozen raspberries (or fresh, when it is season)
Cashew nuts to decorate
Let the raspberries thaw. Mix the two flours, add the yeast, the sugar, the vanilla and the slices of almonds. Pour the yogurt, the oil and the milk and stir in order to mix all the ingredients. Cut coarsely the chocolate into pieces and add it to the dough, save just a square for the final decoration. Cover with baking paper a rectangular baking pan (it’s ok also a circular baking pan with a diameter of 24 cm). Grease with extra virgin olive oil and pour inside half of the dough. Place a layer of raspberries and cover with the rest of the dough. Decorate with raspberries and cashew nuts. Bake in the oven at 180° for 30 minutes. Remove from the oven and let the cake cool down. Melt in a water bath the chocolate square you saved, soak the tip of a knife in the white chocolate and spread on the surface according to your fantasy. Finally cut the blondies into squares. You just have now to eat this delicious sweet … and I don’t think it will arrive to the next day!
