Rustic cake with chocolate and nuts

A slice of rustic cake that has the strong aroma of chocolate and the crunchiness of walnuts accompanied by some coconut cream with an exotic touch and a cup of green tea. The snack is served! And what a snack ... the rustic cake is prepared without flour, the dark chocolate gives it antioxidants, an irresistible scent and a lot of softness while the nuts bring energy and precious fatty acids.


140 grams of walnut kernels
120 grams of dark chocolate
80 grams of whole cane sugar
4 eggs
1/2 teaspoon of vanilla powder
1/2 small glass of rum
Coarsely chop the walnuts together with 20 grams of sugar taken from the total. Separately, blend the chopped chocolate and add it to the nut mixture. Combine vanilla, remaining sugar and mix. Transfer the nut and chocolate mixture to a large bowl. Break the eggs by separating the yolks from the whites. Incorporate the egg yolks into the nut and chocolate mixture, mix, add the rum. Separately, add a pinch of salt to the egg whites, whip until stiff and add to the mixture. Pour the mixture into a 24 cm diameter cake mold lightly greased with oil. Bake in the oven at 180 degrees for 35 minutes. Remove the cake and let it cool. You can serve with a little coconut cream. To prepare the coconut cream, leave the jar of coconut milk in the fridge, then take only the solid part and beat it with a whisk as if it were normal cream.
