When you would like to eat something new and special or for a joyful dinner with friends there are the seitan fajitas wrapped in khoran flour tortillas. A yummy and tasty dish, rich in proteins, vitamins, mineral salts and fibers and also a valid alternative to the original recipe prepared with meat.
Ingredients for Tortillas
150 g khorasan flour
100 g whole grain khorasan flour
2 tablespoons of extra virgin olive oil
A pinch of fresh brewer’s yeast
Pink Himalayan salt
Ingredients for the stuffing
500 g seitan
1 red pepper
1 yellow pepper
2 red onions
2 cloves of garlic
Extra virgin olive oil
Fresh chili pepper
Prepare the khorasan flour tortillas. Dissolve the yeast in a little lukewarm water and pour it on the flour. Add the olive oil and knead the dough, add as much water as it is needed to obtain a soft dough. Add also 2-3 pinches of fine ground pink salt and go on kneading. Divide the dough in balls of approximately 50 g each, press the balls with the hand and roll the dough with a rolling pin, the tortillas should result thin. Finally make small holes on the surface with a fork. Cook the tortillas in a frying pan greased with a little olive oil. Cook one side of the tortilla, then flip it and cook the other side. Put the tortillas on a plate and prepare the filling.
Cut the seitan into strips, rinse the peppers, cut them into strips and remove seeds and the white part. Cut the onions into slices and chop up the garlic. In a frying pan sauté the onion together with a tablespoon of extra virgin olive oil and two tablespoons of water. Add the peppers and cook for 3-4 minutes, stir often. Add the seitan, the garlic and season with two tablespoons of tamari sauce. Mix and cook for about ten minutes. At the end spread a pinch of cumin, coriander and the fresh chopped chili pepper. Heat shortly the tortillas in the oven and fill them with this stuffing, fold the sides to close the tortillas and serve!
