How to bring the flavors, colors and scents of summer into these cold winter days? Here is the answer, Sicilian style chard parmigiana! In this recipe the aromas mix and enhance each other for a riot of taste in which it is truly a joy to sink your teeth. And then this parmigiana is light, in fact the vegetables are not fried, and made only with simple and genuine ingredients, such as tomato, which in the form of a sauce is a precious source of lycopene, a powerful anticancer agent, and chard, which provides fiber, magnesium, potassium and antioxidant substances. All that remains is to wish you a good appetite, the Sicilian style chard parmigiana is served, to the delight of all!
Ingredients
1,5 Kg of chard
800 grams of tomato pulp
1 clove of garlic
1 shallot
100 grams of wholemeal breadcrumbs
Parsley
1 mozzarella
200 grams of smoked scamorza cheese
Parmesan
Extra virgin olive oil
Salt
Pepper
Clean the chard, separate the stems from the leaves and remove the ends of the stems. Blanch the stems in abundant salted water, cook for about 10 minutes. After 5 minutes add the leaves too. Drain the chard and leave to cool down. Chop the shallot and brown it in a pan with extra virgin olive oil. Add the tomato pulp and cook for fifteen minutes. Separately, in a bowl, pour the breadcrumbs, the chopped parsley and garlic, add two tablespoons of grated Parmesan, a grind of pepper, mix. Grease the bottom of a pan with high sides with extra virgin olive oil and distribute a spoonful of breadcrumbs flavored with spices. Cover with a layer of chard, spread another sprinkling of breadcrumbs, a few slices of mozzarella and scamorza, cover with a layer of tomato sauce. Make another layer of chard, then breadcrumbs, mozzarella and scamorza and sauce. Continue in this way until the ingredients are used up. Finish with the tomato sauce, a few slices of mozzarella and scamorza and parmesan. Bake at 180° C for 30 minutes.
