Here is a dish that tastes of spring, also able, with its taste and colors, to bring joy. But spaghetti with asparagus and saffron are also a concentrate of health! They are in fact rich in fiber, antioxidant and anti-inflammatory substances. And don’t forget that, according to scientific studies, saffron also proves useful in counteracting sadness and depression (Siddiqui et al, J Pharm Bioallied Sci, 2018). So, let's prepare this very special recipe together!
Ingredients
320 grams of whole wheat spaghetti
500 grams of green asparagus
1 shallot
1 sachet of saffron
Extra virgin olive oil
Sea salt
Rinse the asparagus, cut the lower harder part of the stem. Steam the asparagus for about 10 minutes, drain and cut them into round slices about a couple of centimeters long. Slice the shallot and sauté it in a pan with extra virgin olive oil. Add the asparagus and cook for a couple of minutes. Boil the pasta and drain it al dente. Pour the pasta into a serving dish, pour the asparagus sauce and lastly the saffron dissolved in a ladle of pasta cooking water. Stir and serve.
