The recipe, very tasty, easy and fast, is prepared with black cabbage, also known as black kale or Tuscan kale. Black cabbage pesto is a very healthful dressing for your dishes, this variety of kale indeed is rich in antioxidants, vitamins and mineral salts.

350 gr of pasta, the advice is to choose whole grain spaghetti
1 bunch of black cabbage leaves
1 handful of almonds
15 gr of grated Parmesan cheese
15 gr of grated Pecorino cheese
Garlic, from half a clove to 2 cloves, as you like
Extra virgin olive oil
Coarse salt
Rinse and dry the back cabbage leaves. In this version of the recipe raw leaves are used, for this reason harvest the internal leaves, that are more soft. Cut the leaves coarsely and blend them with a blender together with the almonds, the garlic and just a pinch of salt. Add the cheeses and blend again until you’ll obtain a homogeneous compound. Pour the pesto in a bowl and add slowly the olive oil until the pesto is of the desired consistency, keep on mixing with a spoon. In the meantime boil some salty water for your pasta, add the salt and finally the pasta. When the pasta is ready dress it with the black cabbage pesto.
