320 g durum whole wheat spaghetti
400 g cherry tomatoes
1 clove of garlic
Whole grain breadcrumbs
Fresh hot pepper
Extra virgin olive oil
Cut the garlic into slices. In a frying pan pour abundant extra virgin olive oil and add the garlic. Put the pan on a very low heat and cook slowly, the garlic should not burn. As soon as you see that garlic starts frying, remove the pan from heat, wait until the temperature lowers a bit and put again on the heat. Go on in this way for ten minutes, then let this dressing rest. Rinse the tomatoes and cut them into half, put the tomatoes in an oiled backing pan. Add a pinch of fine ground sea salt and chopped lesser calamint. Spread the breadcrumbs and pour a little olive oil. Bake in the oven at 180° for 25 minutes. In the meantime cook the pasta and drain it al dente. Add the pasta in the pan with the tomatoes. Pour also the dressing of olive oil and garlic that you heated a few seconds before adding it to the other ingredients, and complete with chopped hot pepper, rich in vitamin C. Mix the ingredients and serve.
