Yummy, nutrient and easy to prepare, this recipe is really special! Spaghetti with octopus are a delicious dish that has the slow-release carbohydrates of pasta and the proteins of the octopus. Moreover, octopus is considered a low calorie and low fat food while it is a precious source of mineral salts such as iron, phosphorus, calcium and potassium. In addition to these properties, the recipe brings also antioxidants and vitamin C of parsley and hot pepper, added only at the end in order to preserve their healthy characteristics.
320 g durum wheat spaghetti, better in a big format like pici
1 kg octopus
800 g tomatoes
1 leaf laurel
1 clove of garlic
Extra virgin olive oil
Clean the octopus. Prepare a pot full of boiling water, add the chopped laurel leaf and, by grabbing the head of the octopus, soak the tentacles in the pot for a couple of times. Put then all the octopus in the pot and cook it for twenty minutes. Drain the octopus and cut it into pieces. Chop up the garlic and the onion and sauté them in a frying pan with a little olive oil and two tablespoons of water. Add the tomatoes cut into pieces and cook for fifteen minutes. Crush the tomatoes with a fork and add also the octopus. Add a pinch of salt and pepper and keep on cooking for twenty minutes. In the meantime, cook the pasta and drain it al dente. Season the pasta with the octopus sauce, add a pinch of fresh chopped hot pepper and a handful of chopped parsley and serve!
