This is a light, healthy but also really yummy recipe! Steamed mackerel maintains the softness of the flesh but also its properties thus being a precious source of proteins and omega 3 fatty acids, that are anti inflammatory substances able to protect the heart. Onion, even if cooked in the pan, preserves the antibiotic and diuretic properties, moreover, when onion is sautéed in olive oil, it acts by stimulating and supporting the work of the liver. To complete this healthy dish a vegetable, we have chosen steamed broccoli but you can use also green beans to get the maximum benefit from their mineral salts, vitamins and fiber.
400 grams of mackerel fillets, cleaned
2 red onions
30 grams of Whole cane sugar
Extra virgin olive oil
50 ml apple cider vinegar
1 broccoli or other vegetable such as green beans, steamed
Marinate the fish in the lemon juice and a little olive oil for an hour. Slice the onions and the shallot and sauté them in a frying pan with one tablespoon of extra virgin olive oil and two tablespoons of water. In a bowl let the vinegar boil together with the sugar. Cook until the syrup will be reduced by a third. Pour the syrup on the onion and the shallot, stir and keep apart. Place the fish in the cooking bowl for the steaming and steam it for ten minutes. Serve the mackerel with caramelized onions, some grated pepper and the vegetables, broccoli or green beans, seasoned with extra virgin olive oil, vinegar and a teaspoon of tamari sauce.
