Here is a fresh and light idea for a summer dessert, with lots of fruit, rich in vitamins and minerals. The tiramisu, an Italian dessert, in the summer version that we offer is really delicious, easy to make and perfect for everyone, adults, children and even for those who are lactose intolerant, since it is possible to choose a vegan yogurt to make the filling. Ingredients for the filling
300 grams of Greek yogurt (also in vegan version)
400 grams of coconut milk, from the fridge
200 grams of strawberries
200 grams of raspberries
3 tablespoons of brown sugar
1/2 orange, juice
Ingredients for the sponge cake
70 grams of brown sugar
80 grams of wholemeal spelled flour
40 grams of cornstarch
1 tablespoon of rum
Preparation of the filling
In a bowl pour the solid part of the coconut milk, which must be cold from the refrigerator. Beat the coconut milk with an electric whisk for a couple of minutes. Combine the yogurt and two tablespoons of sugar, mix slowly. Wash and peel the fruit except the orange, the juice of which will be used later. Cut the peaches, strawberries and kiwis into slices. Pour peaches, strawberries, kiwis and raspberries into a bowl, pour the lemon juice and a tablespoon of sugar, mix and let it steep for about 30 minutes. After this time, take a couple of tablespoons of fruit, add the juice of half an orange and blend until you'll get a puree.
Preparation of the sponge cake
Break the eggs and divide the yolks from the whites. Beat the egg yolks with the sugar in a large bowl and whisk the egg whites until stiff in a separate bowl. Add the flour to the egg yolks, mix well. Pour in the rum and finally add the egg whites with slow movements from bottom to top. Spread the dough on a baking sheet covered with baking paper and bake at 180° C for 10 minutes. After this time, turn the sponge cake upside down on a cloth and quickly moisten the parchment paper with cold water. Remove the parchment paper and let the sponge cake cool.
Preparing the tiramisu
Get large glasses. Line the bottom of each glass with sponge cake. Spread a little water on the sponge cake, which you have prepared by blending part of the fruit. Spread a layer of sliced fruit, then another layer of yogurt cream, then again sponge cake, fruit puree, fruit and cream. Continue like this until all the ingredients are used up, ending with the cream. Decorate with fresh fruit and keep in the fridge for a few hours before serving.
