This pizza tastes of summer, of fresh fruit just picked from the tree and herbs pulsating with life and energy. In fact, today we offer the classic pizza in a special version, with a condiment given by fresh tomato, goat cheese, rocket salad and figs, absolutely to try! And then the pizza thus proposed is a truly complete dish, satiating, nutritious, precious source of lycopene, which is an antioxidant and anticancer substance, vitamins and mineral salts, thanks to the ingredients such as tomato slices and rocket added only at the end of cooking. Summer and its flavors are served!
Ingredients for the dough
150 grams of semi-whole wheat flour
75 grams of whole wheat flour
125 grams of warm water
6 grams of fresh brewer's yeast
5 grams of ground sea salt
Ingredients for the filling
100 grams of tomato pulp
Extra virgin olive oil
Goat cheese to be cut into slices
A handful of rocket salad
1 big tomato
Dissolve the yeast in the warm water. In a bowl, mix the flours, combine the water with the yeast and two tablespoons of oil. Knead, if necessary add more water to obtain a soft dough. Work the dough and add the salt. Beat the dough against the work table to activate the yeast. Put the dough to rise away from drafts for 3-4 hours. Roll out the dough with your fingers on a circular pan greased with oil. Spread the tomato pulp, a drizzle of extra virgin olive oil and salt. Bake at 200° C for 20 minutes in a ventilated oven. Take the pizza out of the oven, alternate slices of fresh tomato with slices of goat cheese on the surface of the pizza. Add the well washed and dried rocket salad and sliced fresh figs. Complete with a drizzle of extra virgin olive oil and serve.
