Surprise stuffed sandwiches, waiting for midnight

Soft, fragrant, delicious and with a surprise heart inside, here are the sandwiches that we will make together today. In fact, each sandwich contains an exquisite filling, all to be discovered! Tomato, dried cherry tomatoes and anchovies, or why not, pumpkin and goat cheese. Not to be missed either mushrooms and onions, in short, there is just the embarrassment of choice and what a joy it will be to discover the different flavors. The strength of these sandwiches is that they are not only delicious and cheerful, but also healthy. In fact, they are made only with unrefined flours and provide fibers, antioxidants and substances to strengthen the immune system. So, fun and health are served while waiting for midnight!

Ingredients

Ingredients for the dough

400 grams of semi-wholegrain wheat flour
100 grams of wholegrain wheat flour
15 grams of brewer's yeast
300 ml of water
2 teaspoons of fine ground sea salt
Extra virgin olive oil

Ingredients for the filling

Tomato pulp
Dried cherry tomatoes
Anchovies
Capers
Shiitake mushrooms
Onion
Pumpkin pulp (maybe left over from previous lunches)
Goat cheese
Dissolve the yeast in the warm water. Combine the yeast dissolved in water with the flour, add the oil and the remaining part of water, mix the ingredients. Work the dough with your hands and add the salt, knead until the mixture is smooth and elastic. Place the dough in a bowl covered with a cloth and let it rise in a warm place for about 2 hours. Pick up the dough again and form 8 balls. Let it sit for 20 minutes. With the help of a rolling pin, roll out the balls to form discs. Fill each disc with a filling following your imagination. For example, in a disc you can put a tablespoon of chopped tomatoes mixed with chopped anchovies, capers and sliced dried tomatoes. In another disc you can put a couple of tablespoons of sliced mushrooms cooked in a pan for 5 minutes with a little sliced onion. The filling made with pumpkin, previously baked in the oven for 15-20 minutes, and a little goat cheese is also excellent.
Close the sandwiches by bringing the edges of the disc towards the center and poking them together with your fingers. You need to seal the sandwiches so that the filling does not come out. Arrange the sandwiches on a baking tray, sprinkle with a drizzle of extra virgin olive oil. Bake in the oven at 200° C for 20 minutes or until completely cooked.
