16 shrimp tail without shell

1 tablespoon of pine nuts
Extra virgin olive oil
2 tablespoons of soy sauce
Fresh ginger root
Rinse the peppers and remove the seeds and the white part inside, cut them into strips. In a bowl pour the lemon juice, the soy sauce and 2 dl of extra virgin olive oil. Chop the ginger root and cut the onion into slices, add them to the marinade together with the pine nuts. Add a pinch of pepper and the parsley. Put the strips of pepper in the bowl with the marinade and be careful that all the stripes are covered by the juice. Cover with a plastic wrap and let the marinade rest for some hours. In the meantime, cook the shrimp tails, peel the orange, cut it into pieces, cut also the avocado into cubes and squeeze the lemon juice over it. Prepare the skewers with the shrimp tails, the cubes of avocado and the orange. Serve the skewers with the marinated peppers and enjoy your meal!
