So here is a delicious recipe created with these ingredients, sweet potato gnocchi topped with a sauce of king trumpet mushrooms, leek and thyme. Ingredients

900 grams of sweet potatoes

270 grams of semi-whole wheat flour

1 clove of garlic

200 grams of king trumpet mushrooms

thyme

1 leek

Tamari sauce

Extra virgin olive oil

Sea salt

Black pepper

Boil the sweet potatoes in plenty of lightly salted water until tender, it will take from half an hour to three quarters of an hour depending on the size of the potatoes. Drain the potatoes, let them cool and peel them. Mash the potatoes to make a puree. Add the flour, a pinch of finely ground salt and black pepper and knead quickly. Form the sausages with the dough. With the knife cut the sausages into pieces in the shape of small cylinders. With the help of a fork, create the typical grooving of gnocchi. Press each piece of dough lightly against the fork tines and, using only your thumb, roll it against the prongs. Let the gnocchi rest on the floured work surface. Meanwhile, prepare the dressing. Clean the mushrooms with a damp cloth and cut the mushrooms into slices. You can use everything of king trumpet mushrooms, even the stem. In a pan, brown the garlic clove and the sliced leek in a drizzle of oil. Add the mushrooms and cook for about ten minutes, stirring often. Add a teaspoon of tamari sauce and mix, complete with a sprinkling of thyme. Cook the gnocchi in boiling salted water. As these are ready they will come to the surface. Drain the cooked gnocchi with a slotted spoon and pour them into the pan with the mushroom sauce. Let it cook for a minute, stirring, then serve.
