Special soup with turnip greens, cauliflower and savoy cabbage, the anti-aging and anticancer dish that can be enjoyed with joy on cold winter evenings. Delicious and warming thanks to the action of spices, here the chilli and pepper, this soup is also a concentrate of antioxidant, anti-inflammatory and anticancer substances. In fact, crucifers, such as turnip greens, savoy cabbage and cauliflower, are vegetables that contain glucosinolates, substances with a powerful action against cellular degeneration, free radicals and aging processes. Ingredients
300 grams of short wholegrain pasta
500 grams of turnip greens
200 grams of cauliflower
200 grams of savoy cabbage
2 onions
1,5 liter of vegetable broth
Chilli powder
black pepper
Sea salt
Extra virgin olive oil
Clean the cauliflower and cut it into florets, clean the savoy cabbage and cut it into strips. Slice the onion, clean and cut the turnip greens into coarse pieces. Pour onions and turnip greens into the pot together with a couple of tablespoons of extra virgin olive oil and a grind of pepper. Cook for ten minutes. In the same pot add the vegetable broth, bring to a boil and add the cauliflower and the savoy cabbage. Cook for five minutes, then add the pasta too. Continue to cook according to the instructions on the pasta package. Remove from the heat, let it cool a bit, add a drizzle of extra virgin olive oil, a pinch of chilli pepper, a little ground sea salt if needed and serve.
