With these two delicious recipes we enter the summer. Elderberry lemonade is refreshing, fresh and also a valuable source of antioxidants, which strengthen the body and help counteract free radical damage (Mikulic-Petkovsek et al, J Agric Food Chem, 2015). And then there is the milkshake, a delicacy made with coconut milk, cocoa, bananas and berries, nutritious, satiating, energizing and fantastic for filling up on anti-inflammatory substances, antioxidants but also vitamins and minerals.
Ingredients for elderberry lemonade
3 lemons
40 elderflower umbrella-like flowers
250 ml of honey
Ingredients for the Milkshake
300 ml of coconut milk
100 ml of soy milk or other vegetable milk, excellent is cashew milk or almond milk
2 bananas
4 tablespoons of berries (blackberries, strawberries and blueberries)
3 tablespoons of unsweetened cocoa powder
Preparation of elderberry lemonade
Gently clean the elderflower and cut the lemons into slices. In a separate pot, bring two liters of water to a boil, remove from heat and add the honey, stirring well. Also add the lemons and elder flowers. Cover with a towel and let it rest for two days, stirring once a day. Filter the liquid using a fine mesh strainer. Bottle and refrigerate for a couple of weeks. Serve diluting with fresh water.
Preparation of the milkshake
Put all the ingredients in the blender and blend to obtain a frothy mixture. Spread into glasses and serve, even with ice cubes if you want a fresher taste.
