Vegan mayonnaise

Mayonnaise can also be vegan, without eggs and prepared with soy milk. This sauce is perfect as a dressing for salads, to eat asparagus, raw vegetables or with meat and fish. You can eat as much of this mayonnaise as you want because it’s low-calorie and does not contain cholesterol.
100 ml of soy milk
2 teaspoons of mustard
1 teaspoon of apple cider vinegar
1 teaspoon of lemon juice
pinch of turmeric
peanut oil or sunflower-seed oil
Add in a bowl the soy milk, the mustard, the salt, the turmeric and the lemon juice. Blend the ingredients with the immersion blender and at the same time add slowly the oil until you reach the desired consistency. It is possible to use also the olive oil but just if it has a delicate taste.
