Summer means also ice creams, perfect for a refreshing and, why not, also healthy snack! But you should choose carefully the ingredients, without exceeding with sugar and using only whole cane sugar and preferring plant based milk in order to prepare a perfect lactose free ice cream. Moreover, also the food combination with berries is really healthy because in the proposed recipe there are only plant based milk and yogurt, for this reason the antioxidant properties of raspberries, blueberries and strawberries are well preserved!
375 ml soy yogurt
100 ml soy whip
70 g whole cane sugar
50 ml soy or another plant based milk
Mix the milk and the sugar, add the yogurt and the cream and stir with a spoon until smooth. If you have the ice cream maker then you have just to pour the mixture in the machine and switch it on. On the contrary, if you don’t have the ice cream maker pour the mixture in a container and put it in the freezer, after one hour take the mixture and stir it with a spoon, put again the ice cream in the freezer. After one hour take the ice cream and stir it again with a spoon. Serve the ice cream in small cups and decorate with abundant berries, enjoy your snack!
