Vegetable and barley soup is a typical winter soup, can heat from the inside, is nutrient and healthy. Barley is indeed a very interesting cereal, it is a source of magnesium, potassium and vitamins of group B and E and beta-glucans, a type of fiber that helps keep under control the levels of cholesterol. To make the soup tastier and healthier also the savoy cabbage, a fiber rich vegetable, onion and celery for a special dish able to bring antioxidants and mineral salts.
Ingredients
200 g of pearled barley
1/2 small savoy cabbage
1 small onion
1 carrot
1/2 stick of celery
Sea salt
Rinse the barley under running water and cook it in a saucepan with a liter and half of water and a pinch of salt. Cook for twenty minutes on a low heat. Add then the savoy cabbage cut into strips, the onion cut into thin slices, the carrot cut into small cubes and the celery cut into small pieces. Keep on cooking for twenty minutes or until the barley is ready in accordance with the timing reported on the pack. Serve the hot soup and enjoy your meal!
