Pasta can be prepared in different ways, with different grains and shapes but, for a healthful diet, whole-grain pasta is always the best choice because it has more fibers and nutritive substances than the refined pasta. Fibers are very important because lower the absorption of sugars and avoid dangerous too high peaks of sugar levels in blood. The proposed dish is dressed with cherry tomatoes, rich in lycopene that is an antioxidant, and clams that are mollusks rich in iron, selenium, an antioxidant mineral very useful for the cardiovascular system, but also fatty acids omega 3.
Ingredients for 4 persons
360 g of whole grain spelt spaghetti
1 kg of clams
400 g of cherry tomatoes
2 cloves of garlic
Extra virgin olive oil
Fresh hot chili pepper
Rinse the clams and put them in a bowl full of cold salty water for about an hour, then, drain, brush and dry them. In a pan pour a little oil and a clove of garlic, cook the clams until they open. Put aside the cooking liquid and remove the shells of the clams, you can save some clams with the shells to décor your dishes. In the same pan add a little oil, the other clove of garlic and the cherry tomatoes cut into quarters. Cook for some minutes, add the clams and cook for ten minutes by adding from time to time the cooking liquid of the clams you put aside. In the meantime, cook “al dente” your spaghetti, drain them and dress with the sauce prepared with clams and cherry tomatoes. Cut the chili pepper into slices and spread on the dishes, add also the chopped parsley, you can decor with the shells you saved. Serve and enjoy your meal!
