Yummy starter, where health meets taste

Here are some ideas for the Christmas dinner, a set of yummy and tasty starters, all thought with an eye on health! Let yourself be conquered by the exotic notes of the starter of prawns, pineapple and vegan mayo, a lot of vitamins, antioxidants and mineral salts, or try the red chicory in the oven, everybody who ate it would the recipe, so easy and yummy. And we aren’t mentioning the dates filled with Roquefort blue cheese, anti inflammatory and helpful to keep at bay the cholesterol thanks to the fiber of dates and the ability of Roquefort to inhibit the synthesis of cholesterol in the body!

Ingredients

Ingredients for the Hawaiian starter

1/2 pineapple

500 grams of prawns

100 ml soy milk

2 teaspoons of mustard

1 teaspoon of apple cider vinegar

1 teaspoon of lemon juice

Pinch of turmeric

2 tablespoons of Ketchup sauce

Sea salt, fine ground

Peanut or sunflower seed oil

Lettuce

Ingredients for the red chicory in the oven

4 heads of red chicory

Extra virgin olive oil

Sea salt, fine ground

Black pepper

Ingredients for filled dates

16 dates

Roquefort blue cheese

Hawaiian starter

Prepare the mayo. In the jar of the minipimer pour the milk, the vinegar, the mustard, the turmeric, the salt and the lemon juice. Blend with the minipimer and at the same time pour slowly the oil. Go on in this way until you get the desired consistency. Add to the mayo the ketchup sauce and, if you like to make the sauce tastier, also a teaspoon of brandy. Cook the prawns, deveined and peeled, for a few minutes in boiling water, slightly salty, then cut them into pieces, peel the pineapple and cut the pulp into cubes. Mix in the pink sauce both the prawns and the pineapple. On a plate put the lettuce leaves and then the pink sauce with prawns and pineapple.

Starter of red chicory in the oven

Rinse the red chicory, dry it and cut it into quarters lengthwise. Place the chicory slices on a baking pan covered with baking paper. Splash the radicchio with a little olive oil and season with a pinch of salt and abundant ground pepper. Bake in the oven at 180° for 10-12 minutes.

Starter of filled dates

Cut the dates lengthwise and remove the pit. Fill the dates with Roquefort and serve!
