Agar agar is a vegetable gelling agent derived from red algae. Agar agar has a laxative action, it contains indeed mucilages useful in case of constipation, it plays also a protective role on gastrointestinal mucosa and has a purifying effect. It also creates a sense of satiety, agar agar is therefore helpful to control hunger during the diets or in case of overweight. Agar agar is gluten free, it contains instead vitamins A, B, C, E, K and mineral salts such as calcium, potassium and iron. It is used in the preparation of puddings, jams and aspic. Agar agar can be found as powder, flakes or scales and its use is very easy: you should dissolve the required amount of agar agar in a glass of water, then add it to the liquid preparation that you want to thicken, let it boil and simmer for a few minutes and finally let cool a few hours.
