Broccoli are rich in mineral salts, such as calcium, iron, phosphorus and potassium, and vitamins, like vitamin C and vitamins of group B. In addition to this, broccoli contain also sulforaphane, an important substance that, according to recent studies, has anticancer properties. Sulforaphane protects also the lungs by removing all toxins. Broccoli protect the stomach and are a source of antioxidant properties, able to fortify the immune system and, according to recent studies, able to treat the symptoms caused by Helicobacter pylori, a bacterium that causes gastritis and ulcer. The broccoli contain also folic acid, very important to prevent anemia and to protect the fetus. These vegetables can be eaten raw, by adding them to salads, or cooked, but in this case it is better to steam them quickly in order to preserve the properties, or as sprouts. Broccoli sprouts can be bought, or, even better, can be obtained at home. You just have to buy a sprouter and in a few days you will be able to eat fresh broccoli sprouts, that you can add to salads. The sprouts contain nutrients and antioxidants in a very high concentration. In case of gastritis or ulcer eat one portion of broccoli sprout every day.
