Strawberry tree honey is one of the rarest and most valuable honey. In fact, the strawberry tree, scientific name Arbutus unedo of the Ericaceae family, the same as the erica and the blueberries, blooms in late autumn between October and November. For this reason, the honey production is restricted only to certain areas where bees can do their job without the fermentation of honey due to humidity and rainfall, very likely in this time of year. For example, in Italy, only Sardinia and Tuscany can produce this type of honey. Strawberry tree honey has a bitter taste and is characterized by diuretic properties, it has also an antiseptic action for what concerns the urinary tract and results anti-asthmatic, however, all these properties have not yet had scientific evidence but are well accepted from tradition. Strawberry tree honey has also an action in case of bronchitis, fever and sore throat. In addition to this, the University of Cagliari published in 2011 on the Food Chemistry Scientific Journal a study about strawberry tree honey, which shows that this honey is rich in antioxidants, more than any other honey, and that for this reason it has an activity against free radicals and aging processes. Finally, a recommendation, in order to preserve all the properties of this honey, it is better not to heat it.
