The drink of the puerto loco

Pablo Neruda defined this city as a puerto loco, a crazy port, and in fact it is a fitting definition for Valparaiso, the Chilean town that overlooks the Pacific Ocean like an amphitheater. Valparaiso is colorful, the houses cling to the numerous hills, in particular 42 hills, showing off colorful hues where red takes yellow by the hand and does somersaults on intense turquoise and sea blue. It is fascinating to walk through the narrow streets, climb stairs and elevators that open up exceptional views in front of us. It is very hot here in Valparaiso and in every corner of this beautiful city we see people sipping a strange, dark orange drink and it seems to contain ... wheat? Is it possible? Intrigued we ask for information, it is the motè with huesillos, a very popular drink here, and yes, what we see is just wheat while the juice is prepared with peaches, sugar, cinnamon and lemon. We decided to get the recipe to prepare it every time we miss this cheerful city. Here it is!
200 grams of dried peaches, 5 cups of water, 20 grams of brown cane sugar, 1 stick of cinnamon, organic lemon peel, 1 cup of wheat or barley to be cooked. Pour the peaches into the water and leave to rest overnight. In a saucepan, pour the sugar and cook over medium heat, stirring often for a few minutes, pour a ladle of peach soaking water, continue to cook until the sugar has dissolved. Add the rest of the water, peaches, lemon peel and cinnamon. Let it simmer for 30 minutes. Remove from the heat and let it cool down. Take a large glass, pour 3 tablespoons of cooked wheat or barley, add 2-3 pieces of peach and complete with the juice. Serve with a spoon!
